Flute in Spanish is flauta, a zesty Mexican dish that you may all have tried. Dana and I got together with Isabel, a nurse from Belgium who is one of my classmates to make flautas for lunch. Isabel began by enthusiastically mashing the potatoes. (Isabel does everything in life with exuberance and enthusiasm. It is great fun to do anything with her.)
We will use the mashed potatoes to stuff the flautas. The mashed potatoes are spread over a tortilla and rolled into the shape of a little flute. The simmering tomatillos are for the green salsa that will accompany the flautas.
The flautas are sauteed until golden brown, removed from the oil and tipped up in a colander to drain. The flautas will be topped with chopped lettuce, sliced sweet onion and sliced tomatoes and red and/or green salsa.
Many Mexican meals are accompanied by a simple fruit drink, made of squeezed fruit, water and sugar. Mexican sugars are pure cane sugar, much sweeter than we are accustomed to drink.. We use much less sugar than our Mexican friends. Today the base for our fruit drink is lime juice.
Dana goes with a new beer, Honey Dew, and we sit down to eat our simple meal.
